
Good Morning! What a great weekend it was, seeing people accomplish their goals and getting the chance to hand out medals all day Saturday to marathoners and half marathoners at the finish line of the Grand Rapids Groundhog Marathon. We had a great group of runners brave the cold and ice on Saturday in order to run the groundhog, which was a 4.4 mile loop that the half marathon runners completed three times, and the full marathon runners went on to do 6 loops! We had a total of about 300ish runners, lots of hot chocolate, soup and motivated individuals. By the end of the day, I was exhausted but was so happy to be a part of yet another successful Grand Rapids Marathon event! The even better news, I got to run my own half marathon on the same course the very next day with my buddies Don Kern (yes the famous one), Mandy and Efrain, all friends who typically run in our Sunday group and who help me accomplish my goals each week. My dear hubbs came out with us to run too (he took the picture), he completed 2 loops making his total around 9 miles. How beautiful is this background though?

Here is another picture of the course, and if you look closely you can see swans swimming in the open water. There may be a lot of complaints about Michigan weather, but after running this beautiful trail 3 times, I have no complaints (and I had great company).
So Sunday, I completed a half, my furthest run since the Gazelle girl half marathon last year. Don gave us all a medal, since we completed the course, so this was really cool I should get a picture of it for next post!
Monday it was back to the pool, for a sprint swim!
400 full then 4x100 fast, 300 full 3x100 fast, 200 full 2x100 fast-
My goal was to complete the fast 100's around the same time so that I didn't lose any endurance over time which actually worked. I was happy with the end results, but during it was a lot harder than it looked on paper!
Tuesday was a great day! After an early morning bike/hill workout, I went to the PT/Chiropractic clinic to get my hip worked on which ended up being really good. Then at the end of the day, my friend Mandy invited me to a beer run that the fifth third river bank run was putting on to support their race in May at Perrin brewing co. It was a blast! A 3 mile run that ended up pushing me to stride out and get a little speed work in because of the short distance, and was a blast to run with my friends.
The recipe that I am about to share with you all will change your life! It tastes like pumpkin pie and every time I have a bar I want more!!!
Sweet Potato Protein bars
Via The lean green bean
1 c cooked mashed sweet potato ( I used two)
1 tsp vanilla
1 tsp cinnamon
1/4 c maple syrup (try to use organic)
2 eggs
1/3 c nut butter (I used my homeade almond butter!)
1/3 c plain greek yogurt
Mash all these together and add
1/2 tsp baking powder
2/3 c protein powder (I used vanilla) If you don't have any protein powder you can prob substitute with whole wheat flower or coconut flour, but I havn't tried it!
pour into greased 9x9 pan or baking parchment. I had to bake mine for about 35-40 minutes, but the recipe said to bake for only 13-15, after this time mine was still a gooey mess in the middle so I continuted until I had a firm middle. I have been keeping them in the fridge and warming them up in the microwave when I want one and they are soooooo delicious!
