Life happens

Hi!  Remember me?  Kara Tibbe, the one trying to train for a triathlon.  Sorry guys, life has been nuts!  Between working out (constantly), working on our house (constantly), going to school, working, food prepping, and last but not least trying to spend time with my family and friends I have seriously lagged behind on my blog posts. 




Training continues to go well!  My running group got up to 20 miles on Sunday!  HOLY CRAP I RAN 20 MILES!!!! It was rough guys, but we did it and that is what is important. :) I finally got a new bike seat for my bike, so my butt is no longer screaming while I ride, and soon I will ditch the trainer and actually get some miles in out of doors, which will be a game changer!  As for swimming, I would say it is going swimmingly (ha).  I feel strong and have really gotten my breathing down.  I love you all and am so thankful for your continued support!

Back in action



Good morning!  Sorry about my absence, I'm sure you have all just been dying to get me back ;).  In my absence I completed a few things worth noting.  First of all, I did my first speed workout this year!


I ran 6 miles, doing 4x6 minutes at below race pace speed. By the fourth one I was definitely feeling the burn! 


Also, I figured something out about myself this week.  I think I am obsessed with cooking.  Which I guess is a good thing.  It makes me so happy to try a new recipe and have it be a success, and have my Hubby like it (I have to mention he is not picky AT ALL, thank goodness).  I feel like there are so many people who don't cook, understandably they have busy schedules etc.  But I feel sad for them, because they are missing out on some great times, doing lots of dishes, and learning about all the health benefits of making stuff yo' self!  Thanks mom for always cooking us homemade meals, and getting me pumped about trying stuff that is weird (like healthy molasses cookies ;)).


As for training, it is going really well!  I never could have imagined how good I would feel after two monthes of TRI training, (yes 2 monthes already!!) Thanks for your continued support and love!

Recipe:

Parfait topping; almonds and oats, almonds and oats

place 1/2c oats and 1c sliverd almonds on a baking sheet
bake at 350 for 8-10 minutes checking frequently to make sure not burning
Top on yogurt and fruit for a crunchy parfait! Yummm
