Blizzard!!!

Hi!  Well after making it through the winter blast, I have emerged one day more fit!  After shoveling out my driveway (which was not on the training plan) I was able to make it to the gym to complete my workout for Tuesday.


Easily enough, it was the same workout as last Tuesday, 60 minutes on the bike and 30 minutes on the treadmill.  Running after biking is an interesting feeling, my legs appear to have totally forgotton how to move and the first mile they feel like flubber, which gradually gets better two miles in.  My mile times were a lot faster this week, for some reason which is a definite plus! 


Fun Fact:  I have been food prepping for the week, to make sure I am getting enough protein and carbs.  I have never really done food prep before, and it takes forever!!! I spent about 4 hours yesterday cooking and cutting up vegetebles, and fruit.  BUT the payoff is exponential!  I didn't have to wake up early this morning to make my lunch, instead I had to wake up early to leave as the highway traffic is about 45 in the lovely Grand Rapids winter.  HA, anyway it also ensures that I will be eating healthy all week, since the food is already there I won't be tempted to eat poopy. 
Beef stirfry
1 cup cooked beef (fat removed)
1 1/2 cup vegetables of your choice I used
Bella mushrooms
8 asparagas spears
1/2 onion
snow peas
1/2 red pepper


Heat onion in small amount of sesame oil or coconut oil until transparent, add in the rest of the veggies and cook until reduced.  Add beef, 2 tbsp teriyaki and a small amount of soy sauce.




Rice Vermacelli noodles: find in the ethnic food section of Meijer
place half the package of noodles into a deep mixing bowl
cover noodles with boiling water until submerged
stir every 60 seconds until tender, then drain the noodles and put in a tbsp of oil to keep them from sticking together. 
Place one cup of noodles in a bowl, and then your stirfry on top, Brad ate the rest, so I did't have to worry about over eating!
Rice noodle benefits: gluten free, contain fiber, zinc and iron.  Also they are way less calories than regular noodles.  192cal/cup!




About to head out into the wintery blast. Excited
