Busy Bee

Hello!  Sorry for the delay in posts, last week was quite busy for me with class, work and getting ALL NEW APPLIANCES!!!!! I don't think I could be more excited about anything right now ;).  I got a new dishwasher, microwave, stove and fridge  on Wednesday after our fridge went out on Tuesday.  Stainless Steel and amazing.  The recipes will be coming!!! My weekend was filled with swimming, biking and running (what a concept!) and Brad was kind enough to get me up at 6am again on Saturday to go to the pool, bless him.

Sunday was a rough one for me.  I woke up early so I could run on my own (a LOOOOONG 12 miler, that took exactly 2 hours) because last week I missed church running with the group.  I ran all the way down Baldwin, which is a mainish road in Jenison that has sidewalks all the way down....Do you know what I learned?  I ran down on the left side of the street, where there are a lot of subdividivisons/houses etc. The sidewalk was not user friendly. On the way back I ran on the right side, where the sidewalks are perfectly plowed because it is mainly businesses on that side of the road.  GRRR. If only I knew that phenomenon the first 6 miles, when my stride was limited to about 2 inches so I didn't fall and break my butt. Live and Learn I guess....which is my new motto for Triathlon training.

Monday brought about a new week!  And the longest swim I've done to date without taking a break.  I am a little bit proud of this one guys!  I swam 1500 meters without a break.  I have a new system.  The pool is 25 meters long,  so I have been counting my touches on the far end of the pool, to give me something to look forward to and make it easier to count my laps.  Well, on Monday I had to touch that wall..brace yourself.....THIRTY times.  But I did it!!! I was so excited, I really feel like my endurance is finally getting there for my swimming, which makes me so happy.  Obviously I have a really long way to go, but not drowing when I am swimming a mile on the lake is quite important to me, and my Husband and family as well.  So for that thirty touches with no break, is a small victory!

Maybe I was the more awake one at the pool sat morning?
Another succesful morning swim!
I have been thinking a lot about my goals lately, and although I am reaching one just by doing this beast of a thing, I need to decide what goals I wish to reach for each event....Sooo this coming soon!  And now on to the pictures, my favorite part of posting. :)

Watermelon Salsa:
There was a little mexican taco place on our cruise ship, whilst we  honeymooned that had the most amazing watermelon salsa, and I have been craving this for hmmmm...the last 6 monthes, so I finally made my own healthy version.

1/4 small seedless watermelon diced: I got mine really cheap at aldi**(see stars below)
1/2 medium cucumber diced
1 small red onion diced
1/2 red pepper diced
cilantro (I like A LOT)
1/8 tbs lemon or lime juice freshly squeezied
S & P to taste

I am eating mine in 1/2 wheat pita with some chicken tenderloins I meal prepped this week, and a dollop of plain greek yogurt and handful of greens :) Hope you enjoy!

** If you have a lot of watermelon left over that you don't know what do with I have a great and easy juice recipe compliments of Kayla Itsines.
1 cup of watermolon
1/2 cup frozen strawberries
3-4 mint leaves
blend and enjoy!

XO, Kara
